Our owner-chef grew up in Busan, Korea’s port city, where the markets never close and the food is bold, briny, and meant to be shared. He didn’t bring you a softened, made-for-export Korea. He brought the real thing: the dishes Busan actually eats, cooked the way they’re cooked back home.

The Real Taste of Busan

THE NOODLE THAT NAMED US: Milmyeon

Busan milmyeon (formerly Menkatsu) is the dish this kitchen is named for. When Korean War refugees couldn’t find buckwheat, they pulled noodles from wheat instead, and a Busan classic was born. Springy, chewy strands in an icy, tangy broth, or tossed in a sweet-and-spicy sauce. Either way, it’s summer in a bowl.

BUSAN’S BOWL OF COMFORT: Dwaeji-gukbap

If milmyeon is Busan’s summer, dwaeji-gukbap is its everyday. Pork bones simmered for hours into a deep, milky broth, ladled over rice with tender pork. No MSG, made fresh in-house daily. It’s the working city’s comfort food, the bowl Busan grew up on.

WHERE BUSAN MEETS JAPAN

For centuries Busan was the port where Japan and Korea met, with Japanese neighbourhoods, streets, and shops woven right into the city, and the flavours that came with them. That exchange is the other half of our name. Our founder went to the source, training under master chefs in Japan’s kitchens the old apprenticeship way. The result is golden Korean-Japanese tonkatsu pounded thin and fried crisp, pork ramen with rich chashu, and hand-cut kalguksu. Comfort food with two homelands and one harbour.
